Pani puri calories
A plate of 6 pani puri with potato, chana and sweet chutney has about 220 calories, about 35 a puri. Ten come to about 370. The fried shells are most of it; sweet chutney adds about 20 calories a tablespoon. A street plate, 5 to 8 puris with more or less chutney, runs about 200 to 285.

Pani puri is a round, hollow, fried shell of semolina or wheat, cracked open and filled with potato, chana or ragda, sweet tamarind chutney and spiced mint-tamarind water, eaten in one bite. It's golgappa in Delhi, puchka in Kolkata and gupchup in Odisha.
The shells are fried, so they carry most of the calories. The pani itself is mostly water with a little tamarind; the potato and chutney add the rest.
Typical values for a home kitchen, for the portion named next to each number. Other sites often show bigger numbers because they count a bigger serving or a restaurant recipe. Your own katori, roti and oil change the number; Slate adjusts for them.

How were these numbers worked out?
No standard recipe for pani puri exists in the Indian Nutrient Databank, so Slate assembles a plate of 6 from stated amounts at IFCT 2017 values: 30 g of boiled potato, 4 g of dry kala chana, 10 g of onion, a tablespoon of sweet chutney and 150 ml of pani with 3 g of tamarind and 10 g of mint and coriander. The shells are a packaged pani puri's label values, 39 g for 5 puris with their boondi, since IFCT has no puri shells, with the plate's only fat. No cooked weight is used: the plate is the whole recipe, 220 calories, and one pani puri a sixth of it. No analysed pani puri exists in IFCT 2017, NIN's Annexure 8, USDA FNDDS or the journals searched, so there is no cross-check. The street range, 0.9 to 1.3 times the plate, covers shell size and filling. Every dish on Slate is worked out the same way: how Slate counts calories.
