Bhel puri calories
A plate of bhel puri, 25 g of puffed rice with sev, papdi, potato, onion, peanuts and chutneys, has about 265 calories. Half a plate is about 130, and 100 g about 235. Sev is the most calorie-dense part, about 55 calories per 10 g. A street plate, mixed to order, runs about 240 to 370.

Bhel puri is puffed rice tossed with fine sev, crushed papdi, boiled potato, onion, tomato and peanuts, dressed with sweet tamarind chutney and green chutney and finished with lemon and coriander. It's the Mumbai beach snack, and Kolkata's jhal muri and Karnataka's churmuri are close cousins.
Puffed rice is light by volume, so a plate looks bigger than its calories. The fried sev and papdi, and the peanuts, are where most of the fat comes from.
Typical values for a home kitchen, for the portion named next to each number. Other sites often show bigger numbers because they count a bigger serving or a restaurant recipe. Your own katori, roti and oil change the number; Slate adjusts for them.

Street bhel is mixed to order, and plates vary a lot, especially in how much sev goes on top. Some stalls add raw mango, boiled chana or more peanuts.
No lab has measured street bhel, so the range below runs from 0.9 to 1.4 times this plate.

| Beach or street stall | 240 to 370 | 9 to 14 g |
What changes the calories in bhel puri?
- Sev is the most calorie-dense part: 10 g is about 55 calories, so a heavy hand with it adds up.
- Peanuts add about 25 calories per 5 g, and each papdi about 20.
- Sweet chutney adds about 20 calories a tablespoon. Dry bhel without it is a little lighter.
- More onion, tomato, cucumber or raw mango adds volume and very few calories.
How were these numbers worked out?
No standard recipe for bhel puri exists in the Indian Nutrient Databank, so Slate assembles a plate from stated amounts at IFCT 2017 values: 25 g of puffed rice and 5 g of peanuts in the proportions of the databank's open-source bhel, 10 g of sev, 2 papdis, 20 g of boiled potato, onion, tomato, a tablespoon of sweet chutney, coriander and lemon. The fried parts carry the fat: sev is valued as besan plus oil at 39.6% fat and papdi as maida plus oil at 38.5%, the fat Gupta et al. measured in 2016 in bhujia and mathri from Delhi vendors, with 4 g per papdi an assumption. The plate weighs about 112 g with the sev and papdi at fried weight, so it is 265 calories and 235 per 100 g. No analysed bhel puri exists in IFCT 2017, NIN or USDA FNDDS, so there is no cross-check. The stall range, 0.9 to 1.4 times the plate, covers plates with more sev. Every dish on Slate is worked out the same way: how Slate counts calories.
