Momos calories
One steamed veg momo, about 25 g, has about 40 calories, so a plate of 6 is about 245 before the chutney or mayonnaise. A plate of 8 is about 325, and 100 g about 165. Frying changes it most, and mayonnaise adds about 100 calories a tablespoon. A street plate of 6 runs about 245 steamed to 345 fried.

Momos are dumplings of thin maida dough filled with cabbage, carrot, onion and ginger, or with minced chicken, then pleated and steamed. They came from Tibet and Nepal through Darjeeling and Sikkim, and are now sold at street carts across north India, steamed, fried or tandoori.
The maida wrapper is about four fifths of a veg momo's calories. Frying adds a lot; the red chutney adds little, and mayonnaise adds a lot.
Typical values for a home kitchen, for the portion named next to each number. Other sites often show bigger numbers because they count a bigger serving or a restaurant recipe. Your own katori, roti and oil change the number; Slate adjusts for them.

How were these numbers worked out?
No standard textbook in the Indian Nutrient Databank has momos, so Slate uses a published dietitian's recipe from NephroPlus: 200 g of maida with 100 g each of cabbage and carrot, 25 g of spring onion and spices, cooked in 3 teaspoons of oil, counted as eaten, at IFCT 2017 values. The recipe's water is not stated, so 100 ml is assumed for a stiff dough, bringing the batch to about 554 g, 165 calories per 100 g. Each momo is taken as 25 g, the size USDA lists for a dumpling, so a plate of 6 is 150 g and 245 calories. USDA's survey dumpling without meat, 125 calories per 100 g, is 23% below these thicker-wrapped momos, so the page shows a range. The street range covers frying: USDA's fried dumpling carries about 7.7 g more fat per 100 g than a steamed one, about 12 g of oil for a plate. Every dish on Slate is worked out the same way: how Slate counts calories.

USDA's steamed dumpling with no meat is about 125 calories per 100 g, below this page's 165, because its wrapper is thinner. A plate of 6 steamed veg momos is usually between about 190 and 245.
