Sabudana khichdi calories
A plate of sabudana khichdi (50 g dry sabudana, potato, peanuts, a tablespoon of ghee) has about 505 calories. A small bowl from 25 g is about 250. Peanuts add about 125 a plate, and each tablespoon of ghee in the pot about 38. A stall or fasting-thali plate, bigger, with more ghee, runs about 505 to 730.

Sabudana khichdi is soaked tapioca pearls tossed with crushed roasted peanuts, potato, green chilli, cumin and curry leaves in ghee, finished with lemon and sugar. It's the standard Navratri, Ekadashi and Mahashivratri food in Maharashtra, Gujarat and much of north India.
Sabudana is almost pure starch, and the peanuts and ghee add a lot of fat, so a plate is more filling in calories than it looks: in this recipe the ghee and peanuts together are close to half of it.
Typical values for a home kitchen, for the portion named next to each number. Other sites often show bigger numbers because they count a bigger serving or a restaurant recipe. Your own katori, roti and oil change the number; Slate adjusts for them.

What changes the calories in sabudana khichdi?
- Ghee is a big part: each tablespoon across the pot adds about 113 calories, about 38 to each plate.
- Peanuts add about 125 calories a plate here. Fewer peanuts lowers it noticeably.
- More potato and less sabudana lowers it a little; both are starch, but potato holds more water.
- Coconut adds about 40 calories a plate.
How were these numbers worked out?
The recipe is the sabudana khichdi in the Indian Nutrient Databank's open recipe set: a cup (152 g) of sabudana with 140 g of potato, half a cup of peanuts, 20 g of grated coconut and 3 tablespoons of ghee, with a little sugar and lemon, for 3 plates, all the ghee counted as eaten. IFCT 2017 supplies the values, with sabudana from USDA's tapioca pearls since IFCT has no sago, and sugar from USDA. Soaking adds water, not calories, so no cooked weight is used: a plate is a third of the recipe, 50 g of dry sabudana and 505 calories, following the databank's serving count, and a small bowl half of that; the peanuts and ghee are most of the number. No analysed sabudana khichdi exists in IFCT 2017, NIN or USDA FNDDS, so there is no cross-check. The fasting thali range assumes a plate up to 1.3 times as big with up to 1.5 times the ghee. Every dish on Slate is worked out the same way: how Slate counts calories.
