Kuttu puri calories
One kuttu puri, about 13 g of kuttu atta with a little potato, deep-fried, has about 105 calories. Four come to about 420, or about 580 with a 200 ml katori of aloo sabzi. Size and the frying oil decide the number. Sweet-shop or thali puris, bigger and oilier, run about 105 to 155.

Kuttu puri is made from buckwheat flour, which has no gluten, so the dough is bound with boiled potato and rolled out between sheets before deep-frying. It's eaten on Navratri and other fasting days with aloo sabzi and curd, when wheat and rice are avoided.
Kuttu flour has about the same calories per gram as wheat atta. As with any puri, the oil it takes up in frying is about half its calories.
Typical values for a home kitchen, for the portion named next to each number. Other sites often show bigger numbers because they count a bigger serving or a restaurant recipe. Your own katori, roti and oil change the number; Slate adjusts for them.

A lab study found fried foods took up about a fifth more fat after 32 fryings in the same oil. The range below uses that, with puris up to 1.3 times this size.

| Home | 105 | 7 g |
| Fasting thali or sweet shop | 105 to 155 | 7 to 11 g |
What changes the calories in kuttu puri?
- As with any puri, size and frying oil decide the number.
- Kuttu flour is close to wheat atta per gram: USDA puts it at 335 calories per 100 g, against 320 for atta in IFCT 2017.
- Singhara (water chestnut) and rajgira (amaranth) puris are similar per gram.
- Aloo sabzi and curd with it are counted separately.
How were these numbers worked out?
No standard textbook in the Indian Nutrient Databank has kuttu puri, so Slate follows the textbook puri on the puri page with kuttu atta in place of wheat: 80 g of buckwheat flour bound with 40 g of boiled potato, deep-fried into 6. Kuttu is valued from USDA's whole-groat buckwheat flour; potato and oil from IFCT 2017. The oil taken up is set so that the puri matches the fat content of USDA's analysed puri, 24.9%, about 6 g per puri, and the same composition gives a batch of about 163 g at 390 calories per 100 g. One puri is a sixth of the batch, 105 calories. No analysed kuttu puri exists in IFCT 2017, NIN or USDA FNDDS, so there is no cross-check. The fasting thali range assumes puris up to 1.3 times as big with fat up to 1.22 times, Jain et al.'s measured rise for reused frying oil. Every dish on Slate is worked out the same way: how Slate counts calories.
| Ingredient | Raw | Values from |
|---|---|---|
| Kuttu (buckwheat) flour | 80 g | USDA FDC 170687 |
| Potato, brown skin, big boiled and mashed, to bind the dough: an assumption | 40 g | IFCT 2017 F006 |
| Water a little, to knead | 20 g | no calories |
| Groundnut oil Taken up in frying: a stated assumption, so a puri is about 25% fat | 38 g | IFCT 2017 T005 |
