Poori bhaji calories
A plate of poori bhaji, 4 home puris with a 200 ml katori of aloo sabzi, has about 570 calories and 35 g of fat. Two puris with the same sabzi are about 375, six about 760. The frying oil is the largest share, so puri size and old oil matter most. A halwai plate runs about 610 to 890.

Poori bhaji is the festival and Sunday breakfast of north India: small puffed puris fried in oil, with a thin potato sabzi, often with a pickle and halwa on the side. It's sold by the plate from halwai counters in Delhi, Varanasi and Mathura, and it's the usual breakfast on train journeys.
This page adds up the site's own puri and aloo sabzi pages into one plate, so the number is exactly the sum of its parts. Most of a plate's calories are in the puris, and most of a puri's are the oil it took up in frying.
Typical values for a home kitchen, for the portion named next to each number. Other sites often show bigger numbers because they count a bigger serving or a restaurant recipe. Your own katori, roti and oil change the number; Slate adjusts for them.

| 1 plate (4 puris, a 200 ml katori of aloo sabzi) | 570 | 9 g | 55 g | 35 g |

How does home poori bhaji compare with outside?
Halwai puris are often larger than home ones and fried in oil that's been used many times, which raises the fat a puri takes up, and the sabzi that comes with them is usually cooked in more oil, often with a layer of it on top.
No lab has measured a plate of poori bhaji, so the range below is the two dish pages' outside ranges added together, for 4 puris and the same katori of sabzi.
| Version | Cals | Fat |
|---|---|---|
| Home | 570 | 35 g |
| Halwai or puri-bhaji stall | 610 to 890 | 39 to 62 g |
What changes the calories in poori bhaji?
- How many puris. Each home puri adds about 95 calories: 2 with the sabzi are about 375, 4 about 570, 6 about 760.
- The size of the puri. Four large puris (36 g each, USDA's puri) with the same sabzi are about 740.
- The frying oil. Oil used many times leaves about a fifth more fat in each puri, in one lab study (see puri).
- The sabzi's oil. A 200 ml katori of home aloo sabzi is about 185; the halwai version with 1.5 to 2 times the oil is about 225 to 265.
- Halwa with it is a different order of magnitude: a bowl of gajar halwa alone is about 285. Pickle adds a little oil.
How were these numbers worked out?
The plate is 4 puris and a 200 ml katori of aloo sabzi, each made exactly as on its own page, added from the pages' unrounded values and rounded once, so the plate equals its parts. The puri is the poori in The Art & Science of Cooking, 80 g of atta with a teaspoon of ghee deep-fried into 6; the sabzi is the potato curry in Basic Food Preparation, 100 g of potato with tomato, onion and 2 teaspoons of oil per bowl, with a katori at 1 g per ml; IFCT 2017 supplies every value. The plate is 570 calories, and pickle and halwa are left out. No analysed plate of poori bhaji exists, so there is no cross-check here; the parts are checked on the puri and aloo sabzi pages. The halwai range is the two pages' outside ranges added together: bigger puris fried in reused oil and a sabzi with 1.5 to 2 times the oil. Every dish on Slate is worked out the same way: how Slate counts calories.
| Dish | Portion | Cals |
|---|---|---|
| Puri | 4 puris | 385 |
| Aloo sabzi | 1 katori (200 ml) | 185 |
