Chole bhature calories
A plate of chole bhature, 2 home-made bhaturas with a 200 ml katori of chole, has about 635 calories, with 15 g of protein and 32 g of fat. One bhatura with half a katori of chole is about 315. The frying oil in the bhaturas is the largest single share. At a stall, with oilier chole, a plate runs about 675 to 715.

Chole bhature is Delhi and Punjab's heavyweight breakfast: spiced kabuli chana in a thick onion and tomato gravy, with puffed, deep-fried maida bhaturas, onion rings, a green chilli and pickle on the side. It's almost always eaten out, but it's made at home on Sundays too.
This page adds up the site's own chole and bhatura pages into one plate, so the plate's number is exactly the sum of its parts.
Typical values for a home kitchen, for the portion named next to each number. Other sites often show bigger numbers because they count a bigger serving or a restaurant recipe. Your own katori, roti and oil change the number; Slate adjusts for them.
How many calories are in chole bhature?
| Portion | Cals | Protein | Carbs | Fat |
|---|---|---|---|---|
| 1 plate (2 bhaturas, 1 katori chole) | 635 | 15 g | 67 g | 32 g |
| 1 bhatura with half a katori of chole | 315 | 8 g | 34 g | 16 g |
How does home chole bhature compare with outside?
Stall and restaurant chole is cooked with more oil, often with a film of it on top, while bhaturas vary from small village ones to large restaurant rounds.
No lab has measured a whole plate, so the range below adds the chole page's extra oil, 1 to 2 teaspoons, and keeps the bhaturas as they are: the street bhaturas that were measured held no more fat than this home one. A large restaurant bhatura can be bigger than either.
| Version | Cals | Fat |
|---|---|---|
| Home | 635 | 32 g |
| Chole bhature stall or restaurant | 675 to 715 | 36 to 41 g |
What changes the calories in chole bhature?
- The bhaturas. Each home bhatura is about 185 calories, most of it frying oil, so a third bhatura adds about the same again.
- The chole's oil. A 200 ml katori of home chole is about 265; the stall version with 1.5 to 2 times the oil is about 305 to 345.
- The size of the bhatura. Street bhaturas measured in a lab ranged from 33 g to 52 g; a restaurant bhatura can be larger still.
- The size of the katori: a 150 ml katori of chole is about 200, a 250 ml one about 330.
- Onion, green chilli and a piece of pickle add under 20 calories. A lassi with it adds about 140.
How were these numbers worked out?
The plate is 2 bhaturas and one 200 ml katori of chole, each made as on its own page. The chole is the kabuli channa curry in Basic Food Preparation: 40 g of dry chana per katori with tomato, onion, ginger, a teaspoon of curd and 2 teaspoons of oil. The bhatura is The Art & Science of Cooking's maida and curd dough, with the frying oil taken up set to the 19.6% fat Gupta et al. measured in a Delhi vendor's bhatura, about 10 g a bhatura. Values are IFCT 2017's, with chana and curd from USDA. No cooked weight is known for the bhaturas, so the plate is counted as one portion, 635 calories. No analysed plate of chole bhature exists, so there is no cross-check here; the parts are checked on the chole and bhatura pages. The stall range adds the chole page's extra oil, 1.5 to 2 times its 2 teaspoons, and leaves the bhaturas as they are. Every dish on Slate is worked out the same way: how Slate counts calories.
